oli, sal, pebre negre, aigua i pebrella (una varietat de timó: thymus piperella)
ja els tenia tots a casa
Comencem l'elaboració:

Bé, tot això ja ho havia fet al dematí, així que ens en hem anat tranquil·lament a passejar, sabent que, a la tornada, el dinar quedaria ràpidament a punt per a acabar i servir.
Havent tornat, comencem l'última part de la cocció:

Immediatament sofregirem la tomata, en aquest cas, un potet de sofrit caser
I acte seguit, la carn
Li afegim el brou que havíem reservat
I els alls bullits i les fulles de llorer que havíem reservat
Deixarem que comence a fer xup xup i li afegim la coca
Per aromatitzar li espolsem una mica de pebrella
Deixem que torni a fer xup xup, baixem el nivell del foc, i ho deixem entre deu i quinze minuts (deu al dente, quinze quedarà una mica més cuit)
I transcorreguts aquests minuts, servim als plats
I, després de repetir, açò és tot el que ha quedat

Como puedes observar se trata de un plato baratísimo,
compré un espinazo por 1€ y dos muslos y contramuslos (de los que solo gasté uno) por 1,50 en Eroski
En cuanto al paquete de tortas cenceñas, que compré en Mercadona creo que no llegaba al euro.
La pebrella la puedes comprar en mercadona también, y si no, pues se utiliza tomillo y ya está.
Y mejor si le añades al pollo un poco de conejo. Las setas (rovellones, por ejemplo) también le vienen muy bien.

Así les llaman en la Mancha, y en mi tierra.
Realmente es un plato de pastor. Las tortas cenceñas (coca le llamamos en Valencia) se hacían con harina y agua (sin levadura) sobre las brasas.
Y normalmente la carne era conejo, liebre o torcaz.
Aunque yo, en Albacete, que son unos maestros, lo he probado con caracoles, y hasta con almejas.
Todavía recuerdo a mi madre que hacía el pan en casa (y qué olor tenía la levadura mezclada con la harina cuando fermentaba y se reservaba para la semana siguiente) y lo llevaba al horno a cocer, cuando preparaba las cocas para gazpacho. Era una fiesta.
Por eso, mi sorpresa cuando descubrí que fuera de mi pueblo todo el mundo entendía por gazpacho otra cosa.
